Mom's Mini Meatloaf Recipe

If you've ever wondered "why does my meatloaf fall apart?" Well, a big part of that is using ingredients that help it stick together. This is commonly eggs and breadcrumbs. We use Italian breadcrumbs in our meatloaf for added flavor.


Meatloaf Ingredients:

1.5 lbs ground beef

1 medium onion finely chopped

2 eggs

2-3 garlic cloves minced or 1 ½ tsp garlic powder

2 tbsp parsley flakes

½ cup Italian breadcrumbs

2 tbsp Worcestershire sauce

1 tsp salt (to taste)

1 tsp ground black pepper (to taste)


Meatloaf Topping Ingredients:

½ cup ketchup

4 tbsp. packed brown sugar

Dash of Worcestershire sauce


How to make Meatloaf

Directions:


1. Preheat oven to 350 degrees F

2. In a large bowl, add all of the meatloaf ingredients and mix with your hands until well combined.

3. Spray a cupcake pan with nonstick spray.

4. Scoop meatloaf mixture into cupcake pan and pat flat. (meatloaf can be level or rounded in the cupcake pan.)

5. Bake uncovered for approx. 20 minutes.

6. To make the topping, mix ketchup, brown sugar, and Worcestershire sauce together in a small bowl.

7. With approx. 10 minutes left to bake, coat the mini-meatloaves with your meatloaf topping and finish baking.

8. Let the meatloaves rest for 5 minutes before serving.

9. Add any remaining topping or serve on the side.


For a healthier version, skip the topping all together.
